I'm going to buy one of these for my daughter for her birthday, but I can't find any information if there's a way to make it display English or if it's moon rune only.

It's only in Japanese. You need to go to the US Tamagotchi site where they have translated instructions instead.

I'd be willing to bet there's not much if any text on the actual device itself, as long as you can find english instructions there shouldn't be any issues

Not that it matters, you essentially can't lose these ones, if she keeps fiddling with it, it will keep progressing till it reaches the last stage.
