How much food should I pack if I plan on vacationing here for a couple weeks ?

Also, is there much to do there, or will I leave wanting more ?.

only if you have such a special diet or affection for your local foods.
if you go to Budapest (and sure you will) you will find supermarkets on every corner, you can buy anything you need for a bargain price (I dont know where you from but probably something Western so prepare for 1/4 prices).
even if you are curious enough to explore the countryside, food will be your least concern. grocery stores and small restaurants can be found even in the smallest villages.
the farther you go from Budapest and the lake Balaton the prices fall radically.
