it was predominantly sekiro, everyone does poor copies of fromsoft and action games started putting parryslop everywhere which subsequently made it popular
it was several games combined though

ultimately my stance towards parries is still mostly the same: if the parry is good then its good and stands out from the rest, if its a boring piece of shit then i hate it just like before, just slightly more because its also uninspired now

bloodborne had parry mechanics already, but the can't have been the first, can it? Technically tekken 3 had parry mechanics back in the 90s

It was Sekiro. Fromsoft had to remind (most of) the industry that there are more ways to avoid damage than just rolling out of the way after they made them forget that.
Personally, while I like the mechanic, I don't care for how it just turns you into an immovable wall most of the time. Wo-Long is my favorite, you're actually deflecting enemies' attacks by throwing them off-course instead of just letting the sparks fly off your sword while your character stands perfectly still.

While it didn't start the trend itself, 3rd Strike probably ingrained the idea of parrying being cool into people early on.
