It's "rollslop" because it became a stale, generic and uninteresting combat system everyone already saw hundreds of times.
It's "parryslop" because after shitkiro devs started taking a mechanic that generally used to be a optional, skill-based action and actively force you to use it constantly while lowering the expected skill celling. Hope that helps.

Rolling, parrying and blocking is fine, but in many oldschool games, you actually had to physically avoid evenmy attacks.
Personally, I would add all four as different playstyles with their own strengths and weaknesses, like blocking a heavy, strong enemy will be tough and so will be dodging an enemy much faster than you.
