Bayonetta appeals to gays and women because she is extroverted. She has a stylish, confident demeanor that appeals to those groups and she can be somewhat of a role model to them. To men, her personality is either incredibly hot or incredibly abrasive with no in between. Basically the same reason gay men like Dante.

2B and Eve are introverted, meek, mild-mannered, and feminine characters. 2B is struggling to repress and internalize depression so she projects a layer of seriousness in order to hide her emotions from 9S, who she loves dearly and is clearly tsundere for. Eve just follows orders like a submissive robot, I guess. She is a soldier after all. Either way these characters typically appeal to introverted straight men more than extroverted women or gay men.

There really isn't much of a difference. The girl slay factor is one but Bayo appeal to both sides quite a lot. Then 2B and Eve are pretty much the opposite of that and still appeal to both sides a lot. Only thing with Eve is that she has all the sexy outfits going which is way more male centric. By comparison Bayonetta's outfits in 2 for example are a bit more funny than straight sexy.
