It was the focus on systems and mechanics which obviously took up a colossal amount of dev resources yet added nothing to the core gameplay experience of Monster Hunter.
Think the season system, the "living" world where a monster's behavior on the other side of the map is still calculated in the background, the mechanics around monster packs, etc.
None of these amounted to anything meaningful. At most, the player goes "huh that's neat" in the first hour of playing and then never thinks about it again.
But they did lead to Wilds looking like vomit and running like shit, having absolutely zero content, the horrible mess that is the Artian system...
And then you also cannot forget about how the weapon switching system, which is functionally almost totally useless, necessitated them to adopt the terrible weapon skill / armor skill split, which is another can of worms entirely.
tl;dr it's not the story that led to Wilds being so trash. It was an overzealous dev team that devoted too much time and effort into shit that DIDN'T matter, while devoting too little time and effort into the shit that DOES matter.
