before that i remember playing dark cloud demo in 2001 after getting a ps2 (a jump up from nes and 95s pc) and being amazed of the graphics when compared to ps1. similarly when i played halo on xbox and saw the grass textures

Technically maybe not the most advanced at the time, but the very stylized version of Japan looked extremely appealing to me and it was mesmerizing how the vegetation swayed back and forth in the wind.
We are on the verge of possibilities in gaming that were mere pipe dreams half a decade ago. people dont know it yet but SOON we are going to have AAA games with individual armpit hair strands being fully modeled and ray traced with real time physics based movement. 8k armpit textures. REAL TIME SWEAT PHYSICS where your character sweats more the more she moves around. DLC packs of 20 different pubic hair styles with higher geometry counts than entire xbox 360 character models.

last game that really wowed me was probably something like metroid prime 1, luigis mansion, or super smash brothers melee. i grew up with a n64 so seeing the graphics of the gamecube was insane and i needed to get one asap. later i got an xbox which i enjoyed, but when the 360 gen came out, it wasnt as big of a leap and i remember waiting like 2 years to upgrade from the xbox to the 360. the games looked better but not really to the point that i had to have it "now". also i think a lot of games art styles ended up suffering because franchises on the xbox which already had a good art style ended up looking overdetailed and cluttered on the 360 having to make the next gen of games look "better".
the wii was a major dissapointment when it came out and i think i used it for like 5 games in the years i owned it. graphically it was the same as the gamecube but the quality of the library was substantially worse during the time i paid attention to it.
