It's the same reason people cared about high scores back with arcade games. That was the metric the games gave players to show how good they were at the game. Once home consoles got more popular than arcades, high scores started falling out of favor. So they had to find new ways to compel players to keep replaying games. Zelda had a death counter, so naturally a player would be compelled to attempt no-death runs. Games like Metroid and Castlevania 2 used speed running for different endings as their new incentive. This practice is even more prevalent with modern games all having their built in achievements explicitly telling players what the developers think they should focus on when playing.

I see no issues with practicing to get better at your hobby, some people like to challenge themselves with difficult tasks on purpose.
That said, personally I don't care much about how fast the game was cleared, but I do like reading up about the tricks used and all the technical explanations. Glitches that make fun shit happen are epecially entertaining.

The real issue is speedrunning these days is massively disconnected from what it start as. Back then - especially when games were focused on score attacks - speedrunning was entirely about showing off mad skills at a game top get the high score. These days the focus has shifted from knocking that fucker AAA from the leaderboards to getting to an end state (such as game credits) as fast as possible by any means which leans int o an entirely different mindset and playstyle.

Speedrunning is a blend of hacking (using vulrabilities to mess with software) without external tools and using game knowledge and skill.
It should not be seen as an extension of gaming, rather it's a thing onto itself that has some hacking and some gaming dna.
If you understand that you can apreciate it for what it is, or you can move on, the latter of which is my choice. I really don't care about speedruning.
