I think Nintendo will confirm to the general public what some of us already know: materials and surfaces having different properties, and that every kingdom is designed around an specific animal (snowy area is zebra, jungle area is ostrich, etc)

Sure, but I think the surprise will be complementary. Cappy is a core mechanic in Odyssey, so an equivalent would be to hide the destructible environments in Bananza, but we already know that. Pauline is an example of what they will show, but I bet even after the reveal, you still play with the odd rock form on your back all the time, etc.

I think it might have some kind of hook to it that we don't know about. Could be a new mode. All SMO got was that balloon thing, Nintendo might care more about adding more appeal or trying to add something extra to make sure the game sells a lot.
