Two reasons:
1. Enough time has passed that SH2 is in it's contrarian phase, everyone wants to say "actually, [other Team Silent game] was always better than 2."
2. Traditional survival horror has fallen so far from the mainstream that, despite it's success being built off the original, the remake is receiving all the praise just for being a modern interpretation.

It feels like yet another Japanese game that is embarrassed by what it was, so it has to go through a checklist of "modern gaming conventions" to apologize for what it was. But then it ruins what made the original unique in the first place. FF7 remake, especially Rebirth is another example. And worse, because the new version effectively replaces the old one (GoG is the only place to buy the original Sh2-3 which is more charity than anything).
If I wanted to play Last of Us, I'd play that game, not SH.
Someone made a custom/ots camera and manual aiming mod for SH2-3, and I think this was the better approach. modernized ports, but with OPTIONAL changes.
