FFXIV I guess. Especially on the free trial, levelling crafting is an extreme grind with no trading and no auction house. Once you get to a level where one class requires items that are only available through crafting on another class, the flowchart is like infinitely zooming into a fractal and suddenly you need every single crafter and gatherer levelled up.
You do need to do a combat class to advance main story to unlock new areas for gathering purposes, though.

I made it to the colosseum. Now I just have to farm materials for gear on my partners.

soup is probably one of the least necessary things to collect. too much rng and length of time between getting it, and buddy stats dont matter too much. they're incredibly easy to level, and you can just craft a powerful tool for them. it becomes insanely easy to perfect any crafting, even with zero soup. i love completion as much as the next guy, but it really doesnt have much of an impact.

Check out the Rune Factory series. It has so many skills to level and all sorts of ways to craft and farm. I know you said no combat and Rune Factory has some but it's pretty basic like in Fantasy Life and you can power level with farming and crafting to make combat a complete joke if you don't want to engage with it.

im pretty sure that with enough grind, you could literally play the jobless "idle imp" and swing a stick as your combat class, buy any items or materials you might need, and grind up any crafter/gatherer buddies for anything you cant buy. at LEAST in regards to the story, but im not sure if you need to personally craft the interfere gear, or if you can get a buddy to do it. even then, with just having the job at level 1, a strong enough tool and buddies, you could get it done. the game is a lot more fun if you actually play it and engage with the jobs though. unless of course you have crippling autism and such a notion is inherently appalling to you for some reason.

Well, it was way grindier and more annoying in the first game too, but it definitely has the freedom to do 1 Life only runs. I only have like a couple of hours to play each day, so I've been progressing at leisure pace. The endgame is kinda grindy. Not something you'd expect from a kids game, that's more like some old school MMO prof grind. Which this game basically is. It's enjoyable though. Slowly making my way through the procedural dungeons, which are quite easy, since I've left them until postgame, and now I'm overleveled for the early stages. The material gating is harsh though because of the RNG nature of the dungeons. I also upgraded Marco's shop to the max, so I can now use the drop rate stickers. Although I'm not sure which armor set to pick for now. Everything needs the magic ore now, which is dungeons-only.

Do boss veggies ever get tough? The only ones I've seen so far seem to be pushovers, with the only semblance of challenge being the freshness meter, or whatever it's called. They all seem to die super quickly to charged attacks. I only had to keep doing the X attack to keep the meter up throughout the "fight". Generally speaking, the of time items are third or fourth best if considering the gathering/crafting tools. The slate recipes are better than the basic “of time” but then the true time ones are the best.

For the combat professions, having an elemental weapon to match weakness is far superior, but if you don’t want to bother with that, you can probably get away with just having a light weapon and a true time weapon for everything.

one thing i miss from the original is that there were a lot of npcs - as in actual, non-recruitable npcs in addition to the companions - that were still associated with each life and would react to each of your rank increases and give you stuff and recipes as congratulations
it was awesome having a reputation in the world and seeing people react to your progress
made the whole thing feel much more alive and interconnected
