If I get into something I'll focus on it non-stop over other hobbies for a few days/week(s), but then suddenly lose interest. It took me years to finish a lot of rpgs because of this, while you don't have hyperfixation maybe what I do might help you. Just force yourself to play the game, 9/10 times I still enjoy that thing after I suddenly lose the will to play it and am glad I stuck it out. Same deal for reading/shows/movies, It took me 2 years of constantly forcing myself to sit down and read for it to become a fun habit again. It might work for you.

It's okay to drop games because they're not your type or you realize it's dogshit. Don't force yourself to suffer, just force yourself out of your comfort zone every once in a while.
Also a thing to note is that if you're going to start a long game, it's not going to hold you hostage until you finish it, it's not going to grow legs and run away if you don't touch it for long periods of time and it's okay if you don't beat it under a week.
Playing Dragon Warrior 7 for the first time, it took me about half a year until it was finished. Most of the time I only chipped away at it for maybe 30 minutes-an hour a day, occasionally I went hard with a 3 hour play, a few times I didn't touch it at all for a couple days just to let it simmer. Regardless, I was able to play other video games on the side and it made reaching the credits feel that much better, like finishing a big project.
Sorry for blogposting, but I feel like people are generally losing interest in games because they're treating it like a checklist rather than an actual hobby. It's okay if it takes you 2 years to beat Mario 64. It's okay if Castlevania constantly kicks your ass and you can't beat it on the first, second, fifth, or tenth try. It's okay if Persona 5 is a 100 hour game that you can't finish in a weekend on a whim.
It's OKAY that YOU'RE NEVER GOING TO PLAY EVERYTHING IN YOUR LIFETIME.
It's OKAY that NOT EVERY VIDEO GAME IS CATERED TO YOUR TASTES OR NEEDS.
Throwing a fit that most games don't bend to your will and hand you every trophy for just trying is how you grow miserable and bitter.
