It's for the same reason that all artists creating these shows are liberal. The system filters out those with inspirations or beliefs considered eccentric.
Creating shows is something for the elite. You won't be part of the right groups, have the right contacts, study in the right places, produce the right things, if you're an eccentric whose inspirations are completely foreign to normalfags with above-average education. If your inspirations are obscure, your production will most likely be too, and you'll end up becoming an underground artist. You may even end up penetrating the elite because they also like to have a weirdo among them from time to time, if he is capable of making money, but that's it.

It turns out that consumers don't need to know, recognizing the reference is not necessary, it's like those shitty Tarantino movies that everyone likes but no one recognizes a reference to some obscure B movie like, I don't know, Black Mama White Mama or some piece of shit that's almost impossible to watch.
These guys are using Super Mario Bros or some Nintendo game as a reference, sometimes literally putting fucking Mario right there (I think it was Futurama where there's a parody about video games and Mario literally appears there), because that's their culture. Modern artists are all normalfags perfectly aligned with corporate and mainstream values.

I used to find it weird that cartoons in the 2000s would still show vidya as these pixellated pieces of shit even though real games looked more realistic than ever. And then devs actually started to crank out pixelshit (and voxelshit) in great abundance. So now Minecraft is one of the most commonly referenced vidya aesthetics in media.

What I said (and what is easily observable, by the way) is that the higher you climb in the hierarchy of these things, the more dominantly liberal the place becomes. The conclusion is obvious: there is a bias in favor of elite values when it comes to, guess what... naturally elitist jobs (who would have thought!).
This is just an analogy, though. It's to show that you only get to the top if you align yourself with the dominant culture. The eccentric people who will see the reference to video games as a chance to do something weird full of references to obscure games they like because they have deep knowledge of the medium are not working in big studios. Those who work in big studios are a homogeneous group totally aligned with corporate values, and when they think of video games, they immediately imagine "Nintendo", the king of soulless corporate games, the god of normalfags.

The children the show's intended for know mario since the series is still going and they keep re-releasing even the old games. Mario's also got distinct characters you can parody. Ditto for pacman which had a cartoon recent enough there was a FNF mod for it.

Contra's about the same age, but there haven't been any recent re-releases and your characters are functionally identical shirtless men with guns. The only unique gimmick you could parody off the top of my head is how fucking weird it is when the aliens show up after you've spent all game fighting human soldiers and machines.
