Pure strength builds probably have the easiest time, as you can trade and block a lot of hits - as well as consistently stagger him
I had a shitty INT FTH unoptimized build, and beat him by spamming Lion's Claw with the black knight greathammer

Not every STR weapon has to be gigantic. You can have fast weapons that scale with STR and have the Heavy affinity. Plus, people have proven your statement wrong with gigantic weapons anyway.

If you are struggling that bad use the talisman that boosts how much healing you get from flask so you don't have to double chug as much

You're not really supposed to go pure strength or pure anything in Elden Ring, the DLC makes this the highest level content in the entire series. You probably already reached the STR cap long ago, might as well invest some points into faith for buffs
