The move from DS2, to BB, to DS3 was the pivotal change in Fromsoft's ideology around the Souls series.
DS2 tried to improve and reinforce what was learned from DS1. Keep the game measured/paced. Keep the sense of adventure. Keep the long, winding levels without clear directions. ADP was, imo, a brilliant addition to make dodge rolling really feel like a last resort - a last desperate dive away from danger, and it required investment, it wasn't free. Of course DS2 had a troubled launch and reception (initially), and Miyazaki was already working on BB which was this super fast paced aggression/action game. So when DS3 rolled around I imagine Fromsoft looked at their last two games (DS2 and BB), and went more towards the BB route. DS3 as a result is a much faster game than DS1 or DS2, with more linear level design, and more focus on bosses being difficult instead of challenging.
I still really like DS3, mostly cause I like BB and DS3 is a lot like BB in many ways, but having gone back to play DS2 I really appreciate what the devs were trying to do with that game.
