You watch the epic cutscene explaining how the world came to be and all the major forces in it, and then every new bit of lore you try to tie into that existing framework. The main appeal isn't the shit you glean from item descriptions, though, but from meeting all the other Undead and being invested in their personal quests, which further motivate you to finish your own quest of linking the fire/getting to the Throne/etc.
Elden Ring just has lore and more lore. Melina's the only character I give two shits about and I want to learn more about her, but she's really only there to relay cryptic shit her mother said. I just couldn't care for any of the NPCs in Elden Ring as much as I cared for Solaire, Siegmeyer, Siegward, Anri, the Emerald Herald, the funny cat, etc.
I beat Morgott and I was going to go get the Flame of Giants or whatever, but I know that Melina's gonna sacrifice herself, and I just can't find myself to care about the game beyond her.
OP's right, the game's insanely boring. GRRM may be a great writer and the lore of Elden Ring's interesting on its own, but the way its adapted into a game is just boring as shit.
