I'm looking to play some good JRPGs and finally have the genre click, but I can't find what I want
I want well made action gameplay or at least engaging and thoughtful turn based gameplay, but every JRPG I've tried is so mindless, despite the usually excellent presentation
Basically, what JRPGs are actually challenging, satisfying and doesn't waste my time with grinding or battle transitions constantly?

see, you say "grind" but you also say "actually challenging"
you don't seem to understand that because you grinded, you enabled journalist difficulty

if it's made past the 80s then generally grinding is your difficulty slider, not a requirement

I do, I'm pretty sure, but I've tried a lot of the classics and really bounced off them hard
FF VII and VIII were especially bad, Dragon Quest V was snooze inducing, tried some various SMT games but they were easy once you learnt the elemental and fusion systems

I don't deliberately grind, but I go through an area and get a ton of battles, so naturally I level up fast
That ties into my other point, going through areas then interrupted with the battle transition then the exit transition just kills my enjoyment

The genre is shit. Seriously, everything you want from it you can get better elsewhere. Don't try and force it. Why not play a nice point & click, fightan game, or RTS instead? Plenty of better genres you no doubt have barely tried.

Play the original first. The modern versions of the original actually have speed ups and stuff to make the game go faster. It's a short playthrough. Like 15-20 hours.

Then the remakes are right there. I definitely think it's what you're looking for.

Just about all jrpgs have grinding and battles that's kind of a fundamental part.
In Wild Arms you have a limited ability to skip some common battles before they start and battles with low level enemies, but you'll still ultimately need xp to progress.
Some of the tales games show enemies on the map before fights start so if you're good at hoping and weaving around you can avoid them.

I think some of the Atelier games let you skip fight with weak enemies too.

No, those are the popular ones. They're all bottom of the barrel. SMT is about as low as you can go. Kusoge shovelware coming from nis and compile heart is an improvement over it.

They're just the most famous normies don't actually like jrpgs and don't play any of the good ones, it's like how Naruto and One Piece are the top anime even though they suck.

Tales series (if in doubt i'd start with Symphonia)

Maybe make it past the tutorial. I'll do you a favor and suggest you the Bravely Default games since they let you completely turn off random encounters so you never have to worry about the screen transition have fun with your game play.

Black Souls 2
Crystal Project
Expedition 33

There is some grinding involved, especially if you get your main party wiped, but Wizardry games feel very satisfying to play.
