Sometimes a game's artbook is also a dev diary but there's still very little in the way of journalistic or academic writing on video game development as a discipline.

Console Wars was a fun read but it’s very clearly trying to create a narrative of Sega as the good guys and Nintendo as the bad guys.

You'll probably be hard pressed to get books. There are videos of video game post mortems. The one for Diablo 1 is good.
