AC1 and AC: Mirage both have Arab MCs and take place in the Middle East. Crusader Kings 2 has an Islamic expansion pack. The Civ games always have at least 1 post-Islamic Arab leader. Otherwise, you're left picking at scraps: those being the token Arab characters from Street Fighter, Tekken and Overwatch.
