They are all unique in their own way.
Even tho RE2 is one of my most played games ever (N64), RE3 is the one I prefer.
I freaking love the city's atmosphere, and how everything feels so dire, also Nemy being the only boss throughout the game is something that hardly anybody does.

It's hands-down RE3, but RE2 comes close

Rough first attempt. Tight for the first 15 minutes but after that you get so much ammo and healing items that they have to introduce the Hunters as a potential OHK enemy to keep you from just lazily magdumping enemies and then healing, which doesn't actually work.

Basically just a straight expansion on everything that was in RE1, for better and worse. Enemy roster is better, areas are cooler, the plot is better, etc. etc., but you also get way more ammo, way more supplies, and the size of the areas means it's a lot safer/duller feeling: as a whole it's too big, and then individual rooms are also way easier to dodge enemies in

Just cuts the bullshit. Past couple of games have failed to hone in on the right amount of ammo and enemies that survival horror needs, and the areas were falling apart as they wanted to have more and more, so fuck it: embrace the action and the heaps of gunning you're gonna be doing, package it in a way that it's a lot more fun and in smaller sections that still play like RE but are much more well-paced individually.

It simplified, streamlined and action-ified it for no reason.

Resident Evil will always be the one that started it all
Resident Evil 2 will always be the pinnacle
Resident Evil 3 will always be the start of the downfall with craftable ammo and assault rifles

Yeah the only time running out of ammo is a realistic problem is very early game as Chris in RE1, before you get the shotgun. Handgun is incredibly inefficient at killing zombies, you straight up can’t shoot every zombie you come across. But once you get shotgun, you can now freely blast everyone. With Jill you can just shoot everyone you see the moment you see them, and you can also do this in RE2 and 3 (with a couple exceptions, like RE2 intro you don’t have enough bullets to clear it, but if you make it to RPD you won’t ever have to skip enemies again. RE3 you can quite easily kill every enemy AND beat every optional Nemisis fight.

I love RE2, but it can feel a bit too easy and shooting gallery-ish with how much ammo you receive.

All of them are fantastic games though.
So are the remakes despite what some may say, though 3R obviously dropped the ball pretty hard.

In RE3 you do get ammo but it's almost always for guns you don't want or use, it's not clear cut like in other RE games where you reach the shotgun and now you have a Zombie blaster 9000

I think 3 is the only one that actually lives up to the reputation the franchise has. 1 and 2 are both extremely casual, have barely any puzzles, and aren’t scary. Then suddenly you have actual survival horror and butt clenching moments for the entirety of 3, along with actual puzzles.

RE3 gives you tons of ammo. But there’s also a lot more enemies, so you end up using it all. But freeze rounds and magnum are a trap, the true Nemisis killer is enhanced handgun ammo, it’s super cheap and efficient to make, and it makes Nemisis extremely easy since he hitstuns on every shot, meaning you have to dodge and re-position far less often. This gives you tons of free crafting mats to make shotgun shells and such for other enemies, rather than bankrupting yourself putting everything into Freeze rounds.
