The same reason they haven’t revived stuff like Wave Race, 1080 Snowboarding, Exite Bike/Truck/Bot, etc. They probably think it won’t sell well enough.

Nintendo can probably make anything profitable. It's possible that they simply don't want to associate themselves with more pure simulators because of their brand image.

Vita was a failure by 2014 and yet Nintendo was still coming out with the likes of Federation Force.
