The main theory goes that it's a misspelling of "Fortress of 1000 Traps (Sen is Japanese for 1000) and the misspelling was never fixed or they simply thought it sounded cooler to refer to a non-existent Sen than talk about how many traps are there.

The more fun answers are that Sen refers to the Nameless King as his actual name or as an alternative name for him. (Sen can also roughly mean War in Japanese) Or perhaps it just means "War's Fortress".

Personally I always theorized that Sen is actually Seath the Scaleless and that the lizardmen consider him to be a god and refer to him as Sen. The Snakemen are one of Seath's many creations and his areas have tones of snakemen roaming around them as guards. Seath is also a fucking asshole and loves mechanical mechanisms, prisons, and traps. Also, you find Big Hat Logan trapped in there. Coincidence?
