Older souls games were never really meant to be hard. They were "hard" to people who didn't pay attention and didn't play carefully. DS2 is filled with more attempts to try and fuck you over but it's still all pretty manageable. Those games still have some jank that can kill you here and there but the goal wasn't "how can we rape the player the most?"
Even BB felt more fair, it's really only beast enemies that go super crazy with their attacks but they can also be hitstunned with basic attacks or easily parried. Most of the beast bosses can be exploited with big weaknesses that the levels prepare you for USUALLY.
I really think it's DS3 where shit got really bad, fromsoft was no longer interested in designing a challenge that felt methodical and puzzle-like, they just threw you at enemies with a ton of attacks, delays, and AI that "adapted" to your positioning making it repeated trial and error until you finally learned enough of the bosses attack timings and adaptive strings to beat it properly. It's not interesting as a result and it's not fair. You're literally using the same moveset you've had since DeS but with a jump button added and a special move for your weapon. This is not enough to make combat interesting and it's certainly not enough to allow players to keep up with the retard ninja bosses who have no sense of weight
