Self insert for a first playthrough since I have to learn the setting and gameplay mechanics before I can properly roleplay. At least as far as character personality goes it's self insert, class, race etc varies
For later playthroughs I always try to make thematic characters. Religious zealot and a ruthless mudcore mercenary are my 2 favorite to make most often.

This is the best way to approach character creation. I don't necessarily self insert in the first playthrough but sticking with the most generic options is like you said: The best way to discover the world and learn its history.

I have an OC that I put in every setting regardless of whether she fits. Sometimes she is egregiously out of place and I only use her enough to figure out how to actually roleplay in the story.
