You don't actually need to git gud. Everything is relatively well telegraphed so you can roll through most hits and spam jump attack. In elden ring it's really that simple

There's your problem. Soulslike is knockoff souls. Play the og game and ignore the imitators. DeS/DAS1&2 are the only ones that are good (Haven't tried BB but heard good things). Avoid remasters because they all apparently screwed up the game play for visuals.
