The problem with paladins is that they're always just as good at healing themselves as they are other players, while also usually being a tank like a warrior. The extra DPS warriors have usually doesn't make up for the extra utility Paladins have because actual DPS classes exist. They should only be able to use the good heals on other people but have to channel to heal themselves, and work more in conjunction alongside a warrior than be a warrior with heals, while the actual healer babies the rest of the party. Clerics should always be dedicated mage healers.

Cleric should be a character theme, not a class. There should be cleric healers, cleric supports, cleric warriors, cleric skill experts, and cleric mages.
Unfortunately what we usually end up with is Cleric(mishmash of a little bit of warrior, healer, support, and mage) and Paladin(actual cleric warrior with some support thrown in).

I can't think of any games where clerics aren't some branch of a mage archetype. Like you said, cleric warriors are paladins. Cleric mage sounds like those off-support utility classes with a lot of status effects or ccs and some minor heals. Cleric healer sounds redundant because being a cleric is usually associated with being a healer anyway.

I recently finished Neverwinter Nights 1 (with both expansions), where I made a Cleric of Mask (dual dagger wield, wearing a leather armor).
It was one of the most fun experiences I had.
Also had feels after I finished it...

That's the problem, healing consumes the cleric identity instead of being able to divorce the concepts. What if the deity the cleric follows doesn't have healing under its domains? What if the deity wants to imbue a champion primarily to smite their foes? To seek information?
Being a blessed champion of a deity could cover just about anything, but it's become reduced to the defensive, restorative, support role. It's a waste.

I suppose I do not understand the true meaning of what a cleric is in a fantasy setting then. I've personally never seen a separation of the two and I'm not sure why they would necessarily need to be separated when there are in fact other roles that pair some kind of tank or dps archetype with healing capabilities, usually inferior to that of a cleric.

My favorite archetype tends to be Fighter with some kind of mental protection (i.e. High Willpower, great force of will). Because of this I tend to play Paladin or Cleric in DnD, though I generally don't care for their rules, gods or even magic. But since a lot of mental based saving throws tend to be Charisma or Wisdom based, I generally gravitate towards them.
Ideally, I'd just be a simply Fighter who can take a hell of a beating and just get back up.

The only game I've seen do this is a TTRPG called Anima: Beyond Fantasy. There were a bunch of other casting traditions in the normal class selection kind of setup, but divine powers/intervention was a completely different system that you progressed or regressed in based on how much favor you'd curried with this or that god by your specific behaviors and how they did or didn't please them. Any sufficiently devout character could be a 'cleric' type archetype, but the more extremely you advanced into a god's favor the harder it was to keep it. Deviating from their will would stall or revert your progress.

D&D 4e sort of did this by splitting classes into role and power source. Clerics were the divine healers, Paladins were the divine defenders, you had Avengers (light-armoured holy spellswords, basically the smiting part of paladin split off into its own thing) as divine attackers, and Invokers as divine spellcasters.
It also had similar spreads for Martial, Arcane, Primal, and Psionic characters (with the obvious exception of a martial mage)

The problem with paladins is that they have smite. That is also one of the best things for a paladin. So if you want to hit things with a fuckhueg weapon and be holy, the paladin is the best bet.

Fighters are the perfect class to start a campaign on because they get the most absurd subclassing that brings the campaign into a powergaming session. People see them as lame because they are technically the baseline martial fighter to which all martial classes derive from.
