They were just shittier.
It wasn't until SA that vehicles stopped handling like shit (and each GTA since had different quirks to the handling, but none were objectively bad).
It wasn't until GTA4 that guns behaved somewhat reliably. Guns in III-VC-SA were fucking goofy.
The more recent GTAs are only "easier" because you aren't fighting the controls, nor slippery top-heavy cars, nor guns with a spray pattern of a clock.

Vice City was the first beatable GTA. GTA 4 was the first 100% completable GTA. GTA 5 is harder than GTA 4.

My schizo theory is that some hard levels were sometimes too scripted. Its almost like when you were playing games at the arcades, and the game kicks your ass 5 times in a row and then 6th time all of a sudden its a breeze. That is how I felt with some of the driving parts because traffic always suspiciously fucks you over in the worst possible ways.

Yes and no. They were harder because there was no accurate aim, so you naturally took way more damage even when playing well, and also the collision model was over the top with cars starting to burn after three scratches.

At the same time, they weren't really hard and the difficulty is very overblown because most people here played it as kids. You can easily do a no-lose/death run if you don't do anything silly or get really unlucky with RNG (e.g. having a car randomly roll on top of you). There are things that are much more annoying and obnoxious on the console than PC though, e.g. sniper rifle rampages and also those where you destroy cars, due to lower spawn rate.

Modern GTA slop only punishes you for going off the beaten track, has too much streamlining bullshit taking away the punishment for failing with checkpoints and ability to retry missions instantly, even if you have much less health you can aim like an olympian shooting specialist which is gay
Also dying in the old games took away your weapons and ammo

i beat all them recently, they are all pretty similar in difficulty once you get used to the controls, if you suck at flying for example you aren't going to have a fun time in the older games but i wouldn't really say that makes them so much harder, you have the ability to make things trivial if you start every mission with max armor and good guns

Anon, as much as I think GTA3 is the best one in the series, 90% of its missions are like this. Sometimes you get something different where you have to, for example, find a car of certain type to proceed, but that's it.

Not schizo, Mario kart 64 for example blatantly speeds up its AI when you aren't looking to keep you engaged. Thing is, these weren't even arcade games that make money off of retries so I'm guessing the devs just want to increase the average playtime through bs.
Marvel rivals for instance gets criticism because the matchmaking is subtly tampered with if you win too much.

IV was more like a chaotic physics sandbox where a random npc could show up and run over the mission guy because some other ped pissed him off.
V dialed it all back a bit so mission outcomes were more streamlined, ragdolling was minimized, mission traffic was artificial, cars became very easy to drive, shooting was made better. They improved player control at the cost of realism, so it's generally less frustrating and you end up playing more for the story but have less to enjoy outside of featured content.

Nobody played GTA for very long at parties. When we went to the "cool" PS2 guy's house people got bored of GTA and extreme sports games pretty quick. When they came over to my house (the GCN guy) we played Smash and Soul Calibur for hours and never got sick of it.

They are hard mainly because of how badly unpolished and fundamentally broken they are. If you give them GTA 4 or 5 controls and fix bugs, they become fairly easy, like how it with Vice City Next Gen fan remake.
Back in 2000s, it was piss poor easy to make games because Renderware was a simple platform, which meant easy money, so Rockstar churned games out like it was nothing without any focus on quality control. The results obviously shows as at least half of their games aged shit. Unfortunately contrarians and edgy kids will simply ignore this and scream "skill issue" or call you a faggot, since GTA fanbase is full of knuckledraggers.
