It's a kind of redundant term for games that went the extra mile with creating a realistic gamespace/interaction and reaction with the world rather than a specific feature
most modern games borrow from "immersive sim" games so the it's kind of become redundant

I thought the definition of an immersive sim was simply this: You're given a set of tools to solve a problem, and as the player you have the freedom to do it in whatever way you discover with said tools. System Shock 2 definitely falls into that definition I would think.

A bunch of shit slapped together.
Action/Stealth with inventory management and some degree of world interaction. They tend not to be very good because the action is always fucking garbage and the levels very quickly stop being built for stealth. Outside of Thief, which is why it's the best of the genre.
