I just got a Switch 2 after not having a Switch. How often do they restock these? I want to play N64 games with the original controller.

You're better off finding one off eBay.
Alternatively, RetroFighters has a really good wireless N64 controller that works on the Switch 2.

The C buttons are a must. I try not to purchase Nintendo's controllers because they lack hall effect sticks, but that's just me being autistic. 8BitDo is also releasing an N64 controller this month (if Analogue doesn't delay their shit again).

I'll see what my choices are when I want to play Banjo-Kazooie again. I'd buy all the Nintendo retro controllers right now if I could, but the only one in stock is the GameCube one. (Plus the Genesis controller but there aren't many Genesis games I'm interested in)

Yeah, aftermarket controllers are always a bit off, but it's most especially obvious with the analog stick having incorrect gates and/or sensitivities.
