Okay, here's the deal. We have three categories of games to go through.
First off, regular unpatched Switch games. The Switch 2 backwards compatibility mode gives legacy software access to the full processing power of the new console. This means that games which struggled on the Switch 1, games that had dynamic resolutions or framerate caps that they couldn't meet; these games will now meet their caps. 20fps games are now 30fps, 40fps games are now 60fps, and dynamic resolution never falls below the maximum. However, games that were enjoying good performance already will change very little. Improved load times will be the only benefit.
Second off, free upgrade patches. There are currently 13 games that have received completely free performance patches. These games are now 60fps across the board, and run at resolutions ranging from 1440p to native 4K. You can see the list here:

Last of all, paid upgrade patches. So far, all of these upgrades have come packaged with some form of new content. Small content additions are sold as a $10 upgrade pack, while $20 upgrade packs are more akin to expansion packs. These releases are fully recompiled as NS2 binaries, and they usually come with more significantly reworked visuals than the free patches. New, high res textures are common. You do not get any kind of visual upgrade if you don't buy the pack.

Hyrule Warriors Definitive Edition had a shitty handheld implementation on Switch where it wouldn't reduce the render resolution from the docked mode, it would just display the 1080p image on the 720p screen and the framerate would eat shit
But now that's actually hugely beneficial, because it displays 1080p in handheld mode on Switch 2 without a patch. It's also a solid 60fps, which it certainly isn't on Switch 1.

Mario + Rabbids Kingdom Battle is massively improved, no patch. It turns out it never had a 30fps cap, it was just running double buffer vsync like Link's Awakening, only it could never perform well enough to snap to 60fps. Now it can, the whole game is 60fps on Switch 2.

Doom eternal runs GREAT in the switch 2. Total improvement and looks way better since dynamic resolution is not tanking the image quality to maintain fps
Red faction guerrilla i heard it runs perfectly now even while doing massive destructions but thats not something i experienced first hand so i can't comment on it
BotW and TotK have proper "Switch 2" updates and they both look and run amazingly well.
Other games seem to have organicupdates, like Link's Awakening, which now runs flawlessly at 4K / 60fps and they even reduced that ugly gaussian effect around the border. Haven't played EoW yet but assume it's the same.
