I have a slowly expanding internal document of ways in which to curb the natural cheese of Morrowind, without robbing myself of interacting with certain systems.

This is a self imposed challenge, so I would not recommend it for normal players, i'm a long time veteran, but here are some examples;
>No paying for training for any skill above 25
>No selling custom potions
>No using custom healing/fatigue/magicka potions
>No selling of any object worth more than 2000 gold, all loot of that nature is to be collected and stashed.
>No using custom spells until you reach 75 in that particular school
>No enchanting items unless you're at 50 in the school the spell comes from
>No personal enchanted items until you reach 50 enchanting
There's more rules, but that should give you a glimpse.
It creates a structured system in each playthrough that requires you to struggle and think of more inventive ideas when handling problems, instead of handwaving things away like running over to the Dren plantation and getting a daedric dai-katana at level 1.
As a pokemon enjoyer, you eventually realize that some games are better when you create your own fun.
