DK was designed realistically in the Rare games because the games were designed to look realistic. This was relatively easy to do because it was a low resolution 2D game. The new game is a 2k resolution 3D game, if they wanted to use a realistic art style it would have taken 10 years and 400 million dollars. So they elected to go with a cartoony art style instead, which meant a realistic looking gorilla would make no sense.
