this is mojang we're talking about. copper is literally just an inbetween tier. it's slightly stronger than stone but cannot mine any ores that iron can. i bet it oxidizes too so we'll end up with 80 new armor variations in the creative menu

It’s worse than iron but it mines slightly quicker and lasts longer than stone tools.
Also the copper golem is trying to fix the inventory management issues from all the new items by making a really simple mob to organize your stuff in chests for you without needing red stone at all. They also recently did bundles for extra inventory space not too long ago

A lot of people build their houses, farms etc. before they ever set foot in a cave, it's probably for them same as charcoal.
The game isn't really designed for players who immediately begin strip mining for diamonds before doing anything else.
