What are some (good) MMOs I can play if I want to interact with other players as little as possible.

FF14 you dont have to talk to other players, they might as well be NPCs

I've played Star Trek Online without engaging in a single group event since 2013ish, it's entirely possible to grind to max level and get the best gear without speaking to or playing with anyone.
Depends if you like Star Trek though.
I will say it's a surprisingly varied MMO for how little funding it must receive, and it's improved massively over the years.

Yes actually
As a socially isolated autistic neet MMOs give me a sense of community and curb a bit of loneliness, while providing me with a sense of purpose and goal that I can share with others around me, without forcing me to engage in conversation and exhaustingly keeping up a social mask.
MMOs as a solo player make video games feel alive again. Doing things in a shared world with others, without being forced to interact, is often enough to make any game feel 90% less hollow and meaningless than single player games
