Really, it's preference. Remastered gives you classic, modern and motion controls all in one, uses Trilogy as a basis which some people think isn't so good due to bug fixes and some scan logs being changed. Plus it lacks dynamic lighting from your weapons fire. Original has a distinct style that still shines on its own and has things like the lock-on jump glitch for those that really love their completionist/speedrun stuff, but you're basically stuck with Gamecube controls and lock-on combat as the only option. Primehack is Trilogy, so you're effectively just playing Remastered at the code level with M&KB, and without the remaster on top.
There's pros and cons all over, but the Switch sold so much that there really isn't much reason to go avoiding the Remaster unless specific things or its art design doesn't sit well with you. If you're emulating, then it's simply easier to grab Prime / Primehack, and the sequels while you're at it.
