Why are most games easy for 90% of the playthrough then if you're lucky there is a late/post game thing that actually provides a challenge. are there any games where it's hard from the start? with no ways to cheese through it

No not really, you need to put restrictions on yourself if you want a modicum of difficulty, or just play old games.

Games are made for the movie watcher audience. They're experiences more than anything.
