I've been thinking about that too lately. Imagine all the extra content and top tier gameplay those studious could put in their games if they stopped wasting so much resources on unnecesary shit like hyper realistic graphics, star voice acting (I have never seen a single person buy a game just because their favorite star voiced a character).
