Its like games just jump from medieval ages straight to victorian era and pretend the 1500s-1700s didn't exist.

I suspect one major contributing reason the early modern period gets little representation in video games because it occupies the transition from edged and bladed weaponry to firearms, but with the latter still remaining fairly undeveloped and less engaging compared to modern weaponry. Reloading and preparing a matchlock firearm for a whole minute wouldn't be fun for most people. So you'd have more than double the work by having to not just implement both melee and gunpowder weapons but also have them synergize well while keeping it fun. Not impossible, but definitely requires more thought and effort put into it.

A super underrated period/part of history within the time span you mention is Colonial Mexico and the Spanish empire
In 1521-1600, even to 1700 in some cases, you essentially still had Aztec nobles and soldiers, some towns and cities etc existing in a mostly prehispanic fashion with a lot of traditional clothing and architecture with only partial or gradual adoption of Spanish traits, some Maya kingdoms and other bits still unconquered, joint Spanish-Mesoamerican expeditions up into the US and down into South America, with some Aztec, Tlaxcalteca etc soldiers even participating in campaigns in the Philippines, in some cases you had Aztec nobles, Conquistadors, Pirates, Knights, Samurai, Native Americans, Inca lords, Filipino people etc all fighting or interacting with each other, etc

In the OP, Granado Espada was about families of pioneers and conquistadors adventuring to the new world while being entangled by political intrigue of europe. It doesnt have to be line battles. You could play as maybe a french musketeer, a spanish or portuguese adventurer, a british privateer, a german landsknecht, etc. also lots and lots of beautiful women in frilly dresses and chalk white makeup and godtier music.
Nobody wants to play on the side of evil. Same reason no games let you play as the germans in ww2.
