Theres a lot of underlying systems that you can make it into like a Harvest Moon Touhou game but when you are starting out dont worry too much and just focus on getting laid. Talk to the girls to get their affection up and use the time stop

I'm playing Digimon Story Cyber Sleuth on steam. If you wanted to get all Digimon or make a perfect Ultra digi you will spend a long time grinding, it's not the grindiest Digimon game, that's probably world 3 or Dawn/Dusk, but you can get into the hundreds of hour range before you even reach end game.

If you want a peak grinding experience, i give you fallout 76

And you will have maybe 10% the fun of a regular fallout game but 500%more fun than any other mmo
