How are the PS3 versions compared to the PS2 versions?

I've only played the PS3 version of Shadow of the Colossus.
The PS3 version runs noticeably better in RPCS3 than the PS2 version does in PCSX2. Which isn't to say PCSX2 is bad (it's improved considerably over the past few years), it's just that the original game ran like complete dog ass on the actual PS2 as well. You can overclock the cycle rate in the emulator to get less slowdown, but that's still inconsistent compared to the PS3 version's more stable framerates.
ICO ran perfectly on PCSX2 from what I recall though, even on my shitty old i5-750 computer

Ico is good, largely the same game just with a higher resolution and widescreen, the same for sotc, but they screwed up that one, you lose your balance much more easily which gets very frustrating very early on.

The framerate oddly doesn't bother me on an original ps2, it kind of makes me appreciate the literal colossal task that both the game and console are doing, the colossi are slow and there's nothing getting in the way between you two so it doesn't really bother me

That shit is so wildly overblown, I've played both versions and you don't even notice the difference unless you're intentionally looking for it

The difference is there, specially when fighting colossi like the third one when you're on it's head and stabbing the smaller ones is even more difficult (although I make them crash into stuff myself which stuns them long enough to stab them)

Hopefully both Ico and Shadow of the Colossus get decomp'd and ported to PC by fans.

Issues with sotc are well known. Bluepoint took a very weird direction with ico. Textures have their mapping changed arbitrarily to make surfaces appear more detailed but it creates a distracting environment that looks too sharp and clean. Lots of effects are broken and noise filters the game made frequent use of are toned down or removed. The visuals in scenes are often too sharp making the game look clean and objects out of place.

It's not a game that needed a higher res. It's a 240p game. Play it at that.

The beyond the forbidden lands project is pretty much starting over and aiming to mod the game itself via emulation, I'm completely clueless over how that'll work out or how much they can truly do, I did see them port an environment that they made.

But on a good crt, the games do look pretty rough on an lcd and even a cheap crt, I tried to use a different one once and Wander was pretty much a blurry blob who's face you couldn't even make out

The project's concept art is some of the coolest fanart in general
