I've never installed a mod in any of my video games. Am I missing something?

Yes, quite a ton of free content.

The sort of content depends heavily on the game and the mod's scope.

Skyrim for example is known for some of the most surface-level slop mods, often being mere model-swaps for titty monsters and shit.

Older games, like Doom and Half-Life, on the other hand have countless fan-made map packs, and even Total Conversion mods - essentially brand new GAMES made using the engine as a base. You may know these small titles such as Counter-Strike and Cry Of Fear.
Mount & Blade: Warband also essentially revolves around its modding community. They've recreated maps and gamemods for everything between LotR and Star Wars.

STALKER's modding on the other hand mostly has focused on restoring cut content and / or expanding the existing potential. Recently, this was taken a whole new level with the fan-made open source fork of the entire X-Ray Game-engine, enabling crazy overhaul mods.

At the end of the day, however, I always, ALWAYS recommend starting without any sort of big mods. Play the OG game in as vanilla-state as possible, so you know what is the base truth. This will help you choose mods that are more to your liking, and actually recognize the changes they make.

Yes you are. Mods can be fucking amazing. From simple things like removing piss filters to total conversion mods, there's a lot to be found. Some of the best gaming experiences I had where mod based. Not too mention you can fix a lot of issues you might have with a certain game. Like a mod that allows you to keep your crossbow loaded on your back in KCD2, sometimes it can be little annoyances that piss you off and mods can solve it. I had a lot of fun turning cyberpunk into an immersive sim with mods, for a recent example. Literally 100x times better than the vanilla experience.

That makes sense.
There are games that are easy to mod and thus popular among the modding communities, and then those that would probably "require" modding to unleash their full potential, but are tightly welded shut by the devs to prevent any sort of alterations. Online-only games also often cite "b-but muh haxxors and cheaters!" as the reason, totally ignoring the iconic user-made maps and gamemodes of the once popular games like HL and Quake.

In the 1990s and early 00s, most devs were more supportive of these community practices. The original iD Software and Doom + Quake are prime examples of this, with the full SDKs dropping for both games right after the release, followed by their engines being made open-source after the next generation of ID Tech dropped.
The last engine of theirs to do this was the Doom 3's ID Tech 4.
After that, Bethesda acquired the entire studio and its IPs, and everything kinda sucks.

Tough, but... kinda, yes. I lost count of how many games just aren't worth playing vanilla. Modders have been the saving grace of so many games in the last 20+ years. They might be the best part of the vidya industry.
