Demons Souls bosses have very little health and you can spam healing items. The levels can be tricky, but anyone can beat it. There's a reason everyone has told you to git gud for 20 years now.
Touhou is harder, but you can use continues or play on easy. Yes, if you want to reach the true boss you'll need to 1cc normal or higher, but you weren't going to beat that boss anyway. Also, the older games, which are better anyway, are easier. 8 and 4 are good noob games.

Yes this is very good, we need more of this. You are playing a game, more content should be a reward for getting better at the game, it's not a goddamn movie.
That said, play a real shmup.

Also, why even using shmups as an example? You can see the entire game by spamming credits.
Literally the only thing they gatekeep with difficulty is a second loop of stages you already played(but harder), and maybe one very difficult additional boss. Which is to say, nothing for players who weren't looking for a harder challenge.
