It was a lot of things kind of mixed together, the exploration, the survival mechanics, the sound design, the story, the environment just speaking to your soul
I think something a lot of them really fuck up is the lack of weight they give to the ecological side of things. Subnautica was interesting not just because of gameplay mechanics, but because it felt like an actual alien ecology and simply watching the wildlife exist was compelling (until the AI behaviours became too obviously formulaic and stupid).
And every single attempt I've seen at a new subnautica or subnautica-like game has completely ignored that. They all treat the wildlife as simple basic bitch mobs with 1/10th the effort put into them that subnautica had.
