Why are farming games obsessed with a mining mechanic but not with actual metallurgy or alchemy?
it's easy to include surface level mechanics and they overall make the game robust, giving the player more things to do
focusing too hard on making them complex doesn't make them better when they aren't the main focus of the game
There are certain audience that dig games like Sakuna that you describe but a larger audience would find such depth to be a chore and most people would rather secure sales on a tried and true formula.
