Let's say you watched the prequel trilogy with zero knowledge of the overall story of Star Wars and didn't even know who Darth Vader was. Would Anakin's turn to the dark side feel realistic to you? We can basically forget the first movie since it doesn't affect his character arc at all. In the second movie his mother dies but that's really the only tragedy in his life. Yes, he was a slave, but all that really amounted to was needing to work for Watto--his life really wasn't much different than the non-slaves, he just couldn't leave. Pod racing seemed like somethng he enjoyed. You'd think that if he were to become obsessed with keeping his loved ones from dying to the point that he'd be willing to betray the Jedi and murder children, he'd have had a lot more terrible things happen to him. There's also the question of "why didn't he ever return to Tatooine to free his mother from slavery in the years after becoming a Padawan?". So he goes from a normal, good-natured kid to full-on evil based on a single death of a loved one that he himself could have prevented if he'd bothered to.

I feel like if I just watched these movies alone, I'd come to the conclusion that Anakin is a psychopath not worthy of the redemption he eventually gets.

OP you have to realize the prequels were shit, and wasting your time on trying to deeply understand them is a waste of time. The new Dune films are 1000 times better, and since Star Wars is basically a copy of Dune, it reasons that Dune is just a better Star Wars.

That single death taught him how painfull it can be to lose a loved one.
He loved another person: Padme. And he had nightmares of her dying, believing that this might become reality if he doesn't acquire the power to save her. Add to this how palpatine slowly manipulated him for year while acting like a fatherly figure to him, slowly injecting distrust towards the jedi into him while at the same time offering him hope to save padme, and you have all the levers in place that need to be pulled to corrupt a person who is good in nature. The movies don't communicate some of this too well. I've read somewhere, that palpatine was also giving anakin the idea, that obi-wan was developing feelings towards padme himself and wanted to take her away from him. That wasn't true of course, but it was a good way to weaken the bond between obi-wan and anakin and make anakin distrust obi-wan. Considering this it makes a lot more sense, how anakin could turn against obi-wan so fast, to the point he was even willing to kill him. But this plot point was cut from the movies for some reason.

If the state of SW was different, I'd say they should remake the prequels as a show. A whole war is skipped between ep 2 and 3 and RotS goes a bit too fast. I know TCW exists but it's not focused entirely on anakin
