The idea of Sonic driving a car isn't necessarily incongruous simply by the fact he can run faster than he could ever drive but the notion that he would find the practice of doing so to be underwhelming to the point of being disinterested in doing so.

Basically what is he getting out of it, since it would probably present too little challenge for someone with his reflexes and ability to process things at speed?

Also even with his speed, driving a car is not the same as running. Racing is not even the same as just driving around, so there is definitely a challenge for him.

I think even with foot power like that, the car would potentially go as fast as he can, but trying to turn it would be shit. Sure Sonic himself has fats enough reflexes to see and react to things at super speed, but it doesn't mean his car would be able to, or at least while staying intact.

SEGA just haven't been wise enough to make the kind of "Sonic Racer" they actually should

Now it has more of that missing Shonen element that Sonic is kinda known for. And it would be an innovative racing concept, where the gameplay has more platformer elements, as Sonic jumps and slides through stage design that the other vehicles have to match.
It makes it fun when Human- or third-party characters join the concept too.
But to me everything becomes generic when Sonic is just driving a car with everyone else, and it's just standard "Mario Kart" gameplay.

The way I see it he'd master it too quickly and his impatient temperament would reach its limit in short order (since he can anticipate things faster than those without super speed, which would drain his enthusiasm for racing vehicles).

Something like that happens to The Flash (I think I read somewhere that trying to watch a movie for him turned into pure agony because his perception of time is so distorted by his speedster powers and magnifies the two hours of idle time beyond his tolerance). Probably not as severe for Sonic but it would be within that radius.
