Regular Morrowind with the graphics extender is still a decent option as it has mods not available for OpenMW.

It doesn't just have enough to do, it's massive, bigger than the main game and DLCs combined
Not to mention it's still Morrowind that you can replay without end
It's not something you can play once and forget, I've played over 100 hours just with my current character and still sometimes just stop to take a screenshot and admire the views
