They aren't. Atari has actually died multiple times. Its just that different companies keep buying the name for cheap once the previous company dies and renaming themselves Atari only to repeat the cycle.
The original Atari split into two entities in 1984, Atari Corporation and Atari Games. The original Atari effectively died in 1996. From there the licensing for Atari was spun off in two directions. The games division became Midway Games, which died in 2010. The corporate assets (owned by JT Storage at the time) were bought by Hasbro, which created a new subdivision called Atari Interactive. This was basically defunct by 2001 when Infogrames SA bought Hasbro and its games division became Infogrames Interactive. This was renamed to Atari Interactive in 2003. Another subsidiary of Infogrames SA, Infogrames Inc (formerly GT Interactive), was renamed to Atari Inc. that same year. Then in 2009 Infogrames SA renamed itself to Atari SA. Atari SA then nearly died in 2013, but barely managed to hang on.
So to sum it up, there are now currently at least 3 different companies all names Atari, none of which have any actual connection to the original Atari that made video games beyond being called Atari. The actual legacy of Atari's games was with Midway, Midway died and all its game rights were bought by Warner Bros Games, which is actively in the process of killing itself.

Okay, in all seriousness: why?
I refuse to believe that there's that kind of nostalgia out there for the 7800. Is it because, like the original, it's backward compatible?
The 7800 was an utterly crap console that was obsolete when it was released. And not just in a Nintendo Switch kind of way, but in a dead-on-arrival, you're-going-to-be-bullied-for-having-one kind of way.
It's not completely a lost cause, I suppose. The ports of Dig Dug and Ms Pac Man were decent, the Double Dragon port is serviceable, and Impossible Mission isn't bad. But I also wouldn't go back and play any of these today, not even emulated, and certainly not for the price.
And I say this as someone who actually owned one back in the late 80s.

the 7800 was on par with the NES which was the only major system out at the time (1986). People thought it was mechanically inferior because 90% of the games were just rereleases of 2600 games, which massively undersold what it could do. Imagine if most games for the PS2 were just budget rereleases of PS1 titles.

There's a lot of homebrew stuff for it, and Atari is making new games for the new console along with licensing the homebrew games. I think they're also finishing and releasing some old prototypes.
