Leaving a boss alive in Dark Souls has zero impact on lore or plot.
Leaving a boss in most other games would require a lot more work than just implementing the option to skip, you have to deal with the implications of this character being alive

For a media that prioritizes player-input there sure are a lack of games that allow you to make actual story-decisions, and I don't think from gets enough credit for that. Besides the fact that every of their npc questlines end with you killing the npc or the npc just dying for no reason.

this was done because fromsoft is competent, and it was an optional side boss with little relevance so the work required is low
realistically most games should allow you maximal freedom of choice in who to side with and who to spare etc, but in practice this would take a lot of work. what if i wanna side with the villain? okay what if i wanna side with them but only at x/y/z point? what if i wanna side with the random plebian in town and not the protag/antag duology they expect?
devs are incompetent at large, lazy, and companies are cheap on things that matter and stupidly over spend on things that are irrelevant.
this however could be a possibility in the future with local ai models that are able to alter and recreate in real time based on anything you say do or choose
