CDPR has witcher and cp that have great dialogue writing, focus on immersion
rockstar has rdr2 and gta that push density and accuracy to insane levels + bunch of other incredible feats
ID has games that really push the technology to make a fluid high fps title that look good while having gameplay
Kingdom come deliverance does a good job being grounded in reality
Ubisoft has some titles that have incredible architecture, their facial animations, clothing, movement tech have been good for a decade
Larian has their top down rpgs with quality writing and some reactivity except for the last chapter.
All those publishers wont be looking at bethesdas technology or game design and go "we should copy that for our next game". Its all just a cautionary tale of how not to do things. I expect some smaller studios try to capture same audience as bethesda by doing superficially similar things while avoiding their usual garbage.
